1 ¼ cup all-purpose flour

3 tablespoon granulated sugar

½ teaspoon ground ginger

¼ teaspoon ground cinnamon

½ cup butter

1 tablespoon ruby red grapefruit zest

2 teaspoon ruby red grapefruit juice

½ teaspoon pink sanding sugar

½ cup powdered sugar
Directions

Preheat oven to 325°F. In a medium bowl stir together flour, granulated sugar, ginger, and cinnamon. Using a pastry blender, cut in butter and grapefruit zest until mixture resembles fine crumbs and starts to cling. Form the mixture into a ball and knead gently until smooth.

Roll dough to a 5 1/2-inch log. If necessary, wrap in plastic wrap and chill about 30 minutes or until firm enough to. Cut log into 1/2-inch slices. Cut each slice in half crosswise to make a half-moon shape. Place 1 inch apart on a ungreased cookie sheets. Prick cookies with a fork to make a segment pattern.

Bake 18 to 20 minutes or until bottoms just start to brown and centers are set. Remove; cool on a wire rack.

In a small bowl stir together grapefruit juice and sanding sugar. Stir in powdered sugar until smooth. Spread icing on curved edges of cooled cookies. If desired, sprinkle with additional pink sanding sugar. Let stand until set.
To Store
Transfer cookies to an airtight container; cover. Store in the refrigerator up to 1 week or freeze up to 3 months.
